Erdnussbutterkekse mit Kakao Nibs | Peanut butter and cocoa nibs cookies

Das Originalrezept, das ich auf der deutschen Seite von Allrecipes.com gefunden habe, ist nicht vegan. Aber als ich in den Kühlschrank schaute und sah, dass ich keine Eier mehr hatte, habe ich das Rezept einfach ohne gebacken. Normalerweise halte ich mich bei Rezepten, die ich das erste Mal backe, streng an die Zutaten, aber Kekse sind oft etwas nachsichtiger.

Ich habe weniger Zucker als im Rezept verwendet (180 g anstatt 260 g). Ich hatte keine Haferflocken oder Vollkornmehl also habe ich insgesamt 210 g Mehl genommen. Und das Ei weggelassen. Nächstes Mal sollte ich vielleicht besser einkaufen gehen, aber wer nicht wagt…haha.

Wie ihr vom Bild seht, war der Teig recht fest. Ich weiß nicht wie der Teig mit dem Ei und den Haferflocken gewesen wäre.

Die ganze Packung Kakao Nibs (200 g) war im Nachhinein auch etwas viel, weil sie viel kleiner als Schokoladentropfen sind. Ich musste den Teig richtig kneten, um die ganzen Nibs einzuarbeiten.  Um das Ei zu kompensieren, habe ich einen guten Schuss Sojamilch hinzugefügt.

Je einen guten vollen Esslöffel der Keksmasse auf das Backblech verteilen und mit dem Esslöffel flachdrücken.

Die Kekse haben wirklich gut geschmeckt. Vielleicht ein bisschen knusprig mit den ganzen Kakao Nibs. 50-80 g sollten nächstes Mal ausreichend sein. Aber im Großen und Ganzen das Experiment ist geglückt 🙂

The original recipe which I found on the German Allrecipes.com website actually isn’t vegan, but when I looked into my fridge and saw that I had no more eggs I tried the recipe without. I normally stick to first time recipes quite strictly especially with cakes but cookies can be more forgiving.

I used less sugar than stated in the recipe (180 g instead of 260 g). Also I used 210 g plain flour as I didn’t have any whole meal flour or oats. And I omitted the egg. Mmm, maybe next time I should go shopping, but no risk no fun. Ha-ha.

As you can see from the photo the mixture was quite firm. I don’t know how the mixture would have turned out with the egg and the oats.

I used the entire packet of cocoa nibs (200 g) which in hindsight maybe was a little too much as the nibs are much smaller than chocolate chips. I had to knead the mixture like bread dough to get all the nibs in. To compensate for the missing egg I added a generous splash of soya milk.

I placed a good heaped dessert spoon of the mixture onto the baking tray and pressed it down with the back of the spoon.

The cookies tasted really great. Maybe a little bit too crunchy with all those cocoa nibs. 50-80 g should be sufficient next time. But all in all the experiment worked out well 🙂
