The original recipe which I found on the German Allrecipes.com website actually isn’t vegan, but when I looked into my fridge and saw that I had no more eggs I tried the recipe without. I normally stick to first time recipes quite strictly especially with cakes but cookies can be more forgiving.
I used less sugar than stated in the recipe (180 g instead of 260 g). Also I used 210 g plain flour as I didn’t have any whole meal flour or oats. And I omitted the egg. Mmm, maybe next time I should go shopping, but no risk no fun. Ha-ha.
As you can see from the photo the mixture was quite firm. I don’t know how the mixture would have turned out with the egg and the oats.
I used the entire packet of cocoa nibs (200 g) which in hindsight maybe was a little too much as the nibs are much smaller than chocolate chips. I had to knead the mixture like bread dough to get all the nibs in. To compensate for the missing egg I added a generous splash of soya milk.
I placed a good heaped dessert spoon of the mixture onto the baking tray and pressed it down with the back of the spoon.
The cookies tasted really great. Maybe a little bit too crunchy with all those cocoa nibs. 50-80 g should be sufficient next time. But all in all the experiment worked out well 🙂
