Sweet potato soup with ginger, garlic and coconut milk

After making Nicole Just’s yummy Avocado Chocolate Cake (here: Avocado Chocolate Cake) I checked out her blog. One of current recipes caught my eye immediately. Not only because of the ingredients, but also the fact that it only takes 20 minutes to cook. Perfect for cooking during the week. After work I stopped at the supermarket to buy the sweet potatoes. As we like our food a little hotter I used a chilli pepper and fried it together with the smoked tofu. Served with a fresh baguette, perfect. A really tasty winter soup.
